Effect of prolonged cold storage in a vacuum package on the quality of dry-cured ham

Abstract: Processors of dry-cured ham often face the challenge of prolonged storage of their products; thus, our aim was to investigate the effect of cold storage of vacuum-packed dry-cured ham Kraški pršut for different periods on various ham characteristics. Three groups of hams stored for either 1 month (control), 4 or 7 months were evaluated for physicochemical, rheological, and sensory properties, as well as volatile profile. The increase in storage time was associated with moisture balance in the ham, as evidenced by lighter colour, softer texture, and higher moisture content, particularly in the superficial (initially more dehydrated) semimembranosus muscle. The differences were most pronounced after 4 months of storage. Further storage for up to 7 months was not associated with any significant changes or degraded quality of the product, as evidenced by the absence of sensory differences between the tested groups. The identified volatile compounds indicate that lipid oxidation was the most important process during ham storage therefore these compounds can be used to distinguish between hams with different storage durations. It can be concluded that prolonged vacuum storage for up to 7 months at refrigeration temperatures does not deteriorate ham quality and even improves the homogeneity of the pieces.

Cold plasma within a stable supercavitation bubble - a breakthrough technology for efficient inactivation of viruses in water

Abstract: Water scarcity, one of the most pressing challenges we face today, has developed for many reasons, including the increasing number of waterborne pollutants that affect the safety of the water environment. Waterborne human, animal and plant viruses represent huge health, environmental, and financial burden and thus it is important to efficiently inactivate them. Therefore, the main objective of this study was to construct a unique device combining plasma with supercavitation and to evaluate its efficiency for water decontamination with the emphasis on inactivation of viruses. High inactivation (>5 log10 PFU/mL) of bacteriophage MS2, a human enteric virus surrogate, was achieved after treatment of 0.43 L of recirculating water for up to 4 min. The key factors in the inactivation were short-lived reactive plasma species that damaged viral RNA. Water treated with plasma for a short time required for successful virus inactivation did not cause cytotoxic effects in the in vitro HepG2 cell model system or adverse effects on potato plant physiology. Therefore, the combined plasma-supercavitation device represents an environmentally-friendly technology that could provide contamination-free and safe water.

Experimental investigation on the effect of natural fire exposure on the post-fire behavior of reinforced concrete beams using electric radiant panel

Abstract: In this study, the effects of natural fire exposure on the post-fire behavior of concrete beams are investigated. The study is based on laboratory tests where three reinforced concrete beams were subjected to fire exposure using an electric radiant panel. This panel enables a precise application of radiative heat exposure closely mimicking natural fire exposure in a safe manner. During the test, the deflections, deformations and temperature changes are measured for all three concrete beams. Additionally, finite element modeling (FEM) is applied to supplement these tests, demonstrating the performance of existing structural fire engineering calculation tools in evaluating the burnout performance of concrete beams. The results of the tests show that the electric radiant panel provide a novel approach for fire simulation which is effective in replicating natural fire conditions, by applying the heat flux as specified in the Eurocode Parametric Fire Curve in a highly controlled manner. The uniformity of the temperature field measured inside the beams and the consistent deformations observed during the heat exposure across all three tests underscores the accuracy of the fire simulation. Furthermore, post-fire assessments reveal that while the exposed beams suffered some reduction in load-bearing capacity, they retained a significant portion of their original strength that was consistent across all three beams. The numerical simulations conducted in this study demonstrate a high level of accuracy in predicting the behavior of the concrete beams during fire exposure. These simulations effectively mirrored the experimental results, validating that they are a valuable tool for assessing concrete structures' performance in fire scenarios.

Exploratory study on the bending performance of thermo-hydro-mechanically densified Scots pine (Pinus sylvestris L.) at elevated temperatures

Abstract: Thermo-hydro-mechanical (THM) densification is a well-known wood modification procedure for improving the mechanical properties of low-density wood species, but its performance at elevated temperatures is not well understood. The objective of this study was to determine the bending behaviour of densified Scots pine at elevated temperatures. A total of 48 specimens (200 mm (longitudinonal) × 20 mm (radial) × 20 mm (tangential)) were tested to investigate the bending performance under constant temperatures at 25, 50, 125 and 175°C, respectively. It was found that the modulus of rupture (MOR) and modulus of elasticity (MOE) of both un-densified and densified pine decreased with increasing temperature. However, the densified wood exhibited more brittle shear failure but retained higher MOR and MOE than the untreated specimens treated at the same temperature level. In general, the results demonstrate that densification can be a potentially effective method to retain the mechanical properties of wood at elevated temperatures, thereby having a potential maintain the load-bearing capacity during and after fire.
